Ingredients
For the Shortbread Cookies:
✔ 1 cup unsalted butter (softened)
✔ ½ cup granulated sugar
✔ 2 cups all-purpose flour
✔ ¼ tsp salt
✔ 1 tsp vanilla extract
For the Caramel-Coconut Topping:
✔ 1½ cups sweetened shredded coconut
✔ 12 oz soft caramels (such as Werther’s or Kraft)
✔ 3 tbsp heavy cream
✔ ¼ tsp salt
For the Chocolate Drizzle & Coating:
✔ 8 oz semi-sweet or dark chocolate (chopped)

Instructions
1. Make the Shortbread Cookies
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy.
- Mix in vanilla extract, then gradually add flour and salt until dough forms.
- Roll dough ¼-inch thick on a lightly floured surface.
- Use a round cookie cutter (or glass) to cut out circles. For the signature Samoas shape, use a smaller cutter (or bottle cap) to cut out the center.
- Place cookies on the baking sheet and bake for 10-12 minutes, or until light golden brown. Let cool completely.
2. Toast the Coconut
- Spread shredded coconut evenly on a baking sheet.
- Bake at 350°F (175°C) for 5-7 minutes, stirring occasionally, until golden and fragrant. Watch closely to prevent burning!
3. Make the Caramel-Coconut Mixture
- In a microwave-safe bowl, melt caramels with heavy cream and salt in 30-second intervals, stirring until smooth.
- Stir in toasted coconut until well combined.
4. Assemble the Cookies
- Spread the caramel-coconut mixture over each shortbread cookie.
- Let them set for about 10 minutes to firm up.
5. Coat & Drizzle with Chocolate
- Melt chopped chocolate in the microwave in 30-second intervals, stirring between each until smooth.
- Dip the bottom of each cookie in the melted chocolate and place on parchment paper.
- Drizzle extra chocolate over the tops for the classic Samoa look.
- Let cookies set at room temperature or in the fridge until chocolate hardens.
