Ingredients

For the Shortbread Cookies:

✔ 1 cup unsalted butter (softened)
✔ ½ cup granulated sugar
✔ 2 cups all-purpose flour
✔ ¼ tsp salt
✔ 1 tsp vanilla extract

For the Caramel-Coconut Topping:

✔ 1½ cups sweetened shredded coconut
✔ 12 oz soft caramels (such as Werther’s or Kraft)
✔ 3 tbsp heavy cream
✔ ¼ tsp salt

For the Chocolate Drizzle & Coating:

✔ 8 oz semi-sweet or dark chocolate (chopped)

Instructions

1. Make the Shortbread Cookies

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Mix in vanilla extract, then gradually add flour and salt until dough forms.
  4. Roll dough ¼-inch thick on a lightly floured surface.
  5. Use a round cookie cutter (or glass) to cut out circles. For the signature Samoas shape, use a smaller cutter (or bottle cap) to cut out the center.
  6. Place cookies on the baking sheet and bake for 10-12 minutes, or until light golden brown. Let cool completely.

2. Toast the Coconut

  1. Spread shredded coconut evenly on a baking sheet.
  2. Bake at 350°F (175°C) for 5-7 minutes, stirring occasionally, until golden and fragrant. Watch closely to prevent burning!

3. Make the Caramel-Coconut Mixture

  1. In a microwave-safe bowl, melt caramels with heavy cream and salt in 30-second intervals, stirring until smooth.
  2. Stir in toasted coconut until well combined.

4. Assemble the Cookies

  1. Spread the caramel-coconut mixture over each shortbread cookie.
  2. Let them set for about 10 minutes to firm up.

5. Coat & Drizzle with Chocolate

  1. Melt chopped chocolate in the microwave in 30-second intervals, stirring between each until smooth.
  2. Dip the bottom of each cookie in the melted chocolate and place on parchment paper.
  3. Drizzle extra chocolate over the tops for the classic Samoa look.
  4. Let cookies set at room temperature or in the fridge until chocolate hardens.
