How to Make Roasted Parmesan Potatoes and Broccoli

This roasted Parmesan potatoes and broccoli recipe is the perfect easy side dish! Crispy, cheesy, and full of flavor, it pairs well with any main course.


Ingredients

  • 3 cups baby potatoes, halved
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried Italian seasoning
  • ½ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

1. Preheat & Prep

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.

2. Season the Potatoes

  1. In a large bowl, toss halved baby potatoes with 2 tablespoons olive oil, garlic, salt, pepper, smoked paprika, and Italian seasoning.
  2. Spread potatoes in a single layer on the baking sheet, cut side down.
  3. Roast for 15 minutes.

3. Add the Broccoli

  1. In the same bowl, toss broccoli florets with the remaining 1 tablespoon olive oil.
  2. After 15 minutes, add broccoli to the pan with the potatoes.

  1. Return to the oven and roast for another 10-12 minutes, until potatoes are crispy and broccoli is tender.
