Ingredients

✔ 1 ½ cups all-purpose flour
✔ 1 tsp baking soda
✔ ½ tsp baking powder
✔ 1 ½ tsp ground cinnamon
✔ ½ tsp ground nutmeg
✔ ½ tsp salt
✔ 2 large eggs
✔ 1 cup pumpkin puree
✔ ¾ cup granulated sugar
✔ ½ cup brown sugar, packed
✔ ½ cup vegetable oil
✔ 1 tsp vanilla extract
✔ 1 cup semi-sweet chocolate chips

Instructions

1. Preheat & Prepare the Muffin Tin

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it to prevent sticking.

2. Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

3. Prepare the Wet Ingredients

In a separate large bowl, beat the eggs, pumpkin puree, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth and well combined.

4. Combine the Dry & Wet Ingredients

Slowly add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix the batter to keep the muffins light and fluffy.

5. Add the Chocolate Chips

Fold in the chocolate chips until evenly distributed throughout the batter.

6. Fill the Muffin Tin

Spoon the batter into the prepared muffin tin, filling each cup about ¾ of the way full.

7. Bake & Cool

Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
