Ingredients

For the Muffins:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup granulated sugar
  • ½ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup melted butter

For the Cinnamon Sugar Coating:

  • ½ cup melted butter
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon

Instructions

1. Preheat & Prepare

  1. Preheat oven to 350°F (175°C).
  2. Grease a muffin tin or line with muffin liners.

2. Make the Batter

  1. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and sugar.
  2. In another bowl, whisk milk, eggs, vanilla, and melted butter until combined.
  3. Gradually mix the wet ingredients into the dry ingredients, stirring until just combined.

3. Bake the Muffins

  1. Divide batter evenly into the muffin tin, filling each cup about ¾ full.
  2. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  3. Let muffins cool for 5 minutes, then remove from the tin.

4. Coat in Cinnamon Sugar

  1. Melt butter in a bowl.
  2. In another bowl, mix sugar and cinnamon.
  3. Dip each muffin in melted butter, then roll in cinnamon sugar until fully coated.
