Garlic Parmesan Chicken Meatloaf Recipe

Ingredients

1 lb ground chicken
1/2 cup Parmesan cheese (grated)
1/2 cup breadcrumbs (Italian-style recommended)
1 large egg
2 cloves garlic (minced)
1/4 cup onion (finely chopped)
1/4 cup milk
1 tbsp fresh parsley (or 1 tsp dried)
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 tbsp butter (melted, for brushing)
1/4 cup mozzarella cheese (optional, for topping)


Instructions

1. Prep the Oven

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.

2. Make the Meatloaf Mixture

  1. In a large bowl, mix ground chicken, Parmesan, breadcrumbs, egg, garlic, onion, milk, parsley, Italian seasoning, salt, and pepper.
  2. Stir until just combined. Don’t overmix, or the meatloaf will be tough.
