  • 1/2 teaspoon salt
  • 1/2 cup water (adjust as needed)

For the Filling:

  • 2 medium potatoes, boiled and mashed
  • 1/2 cup green peas (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon grated ginger
  • Salt, to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

For Frying:

  • Vegetable oil

Steps to Make Samosa

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, salt, and oil or ghee. Rub the mixture between your fingers until it resembles breadcrumbs.
    • Gradually add water and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.
  2. Make the Filling:
    • Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
    • Add chopped onions and sauté until golden. Stir in grated ginger, turmeric, chili powder, and coriander powder.
    • Add boiled and mashed potatoes, green peas, and salt. Mix well and cook for 3-4 minutes.
    • Sprinkle garam masala and fresh cilantro (if using). Remove from heat and let the mixture cool.
  3. Shape the Samosas:
    • Divide the dough into equal portions and roll each portion into a ball. Roll each ball into a thin oval or circle.
    • Cut the circle in half to form two semi-circles. Take one semi-circle, form it into a cone, and seal the edge with a little water.
    • Fill the cone with the potato mixture and seal the top edge with water, pressing firmly. Repeat with the remaining dough and filling.
  4. Fry the Samosas:
    • Heat oil in a deep pan or fryer over medium heat. The oil should be hot but not smoking.
    • Fry the samosas in batches until golden brown and crispy, turning occasionally. Drain on paper towels.
  5. Serve:
    • Serve hot with mint chutney, tamarind chutney, or ketchup.
