Mini Pineapple Upside Down Cakes

Ingredients

For the Topping:

¼ cup unsalted butter (melted)
½ cup brown sugar (packed)
6 pineapple rings (cut into quarters, or use crushed pineapple)
12 maraschino cherries

For the Cake Batter:

1 ¼ cups all-purpose flour
1 tsp baking powder
¼ tsp salt
½ cup unsalted butter (softened)
½ cup granulated sugar
1 large egg
1 tsp vanilla extract
½ cup whole milk


Instructions

1. Prepare the Muffin Pan

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In each cup, add 1 tsp melted butter and 1 tsp brown sugar.
  3. Place a piece of pineapple in each cup and top with a cherry.

2. Make the Cake Batter

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla, mixing well.
  4. Gradually add dry ingredients, alternating with milk, until smooth.

3. Assemble & Bake

  1. Spoon batter over the pineapple mixture, filling each cup about ¾ full.
  2. Bake for 18-22 minutes, or until a toothpick comes out clean.
  3. Let cool for 5 minutes, then flip onto a tray while still warm.
